Ingredients:
- 150g cooked lentils
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/2 tsp turmeric
- 100g chopped spinach
- 100g cherry tomatoes
Instructions:
- Follow the packaging instructions to soak and cook your lentils to your desired consistency.
- In a bowl, combine the cooked lentils, olive oil, cumin, cinnamon, turmeric, spinach, and cherry tomatoes.
- Toss well to combine all the ingredients.
- Serve the salad as a main dish or side. You can also add a squeeze of lemon for extra flavor and vitamin C.
