A quick and easy that’s full of nourishing ingredients for postpartum recovery (serves 2-3).
Ingredients:
- 1 liter store-bought bone broth
- 150g cooked rice
- 75g shredded rotisserie chicken
- 1 medium carrot, chopped (approx. 60g)
- 30g spinach (1 handful)
- 3g salt (½ tsp)
- 1g black pepper (¼ tsp)
Method:
- In a medium-sized pot, heat the bone broth over medium heat until it comes to a simmer. Bone broth is already packed with flavor, so this step only takes a few minutes.
- Add the chopped carrots to the pot and simmer for about 10 minutes, until they begin to soften.
- Add the shredded rotisserie chicken, cooked rice, and spinach to the pot. Stir until the spinach wilts and everything is well combined. Let the soup simmer for another 5 minutes to allow the flavors to meld together.
- Season the soup with salt and black pepper to taste. Adjust the seasoning to your preference, keeping in mind that the broth may already have some salt content.
- Ladle the soup into bowls and serve hot. The warm liquid will be soothing and nourishing, perfect for a postpartum meal.
- If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. You can also freeze the soup in portions for a convenient, reheatable meal later.
