A simple, flavourful and freezer friendly meal that provides great postpartum recovery (serves 3-4).
Ingredients:
- 450g ground beef
- 300g frozen stir-fry vegetables
- 30ml soy sauce
- 5g garlic powder
Instructions:
- Brown the ground beef in a large pan over a medium-high heat, breaking it apart with a spoon until fully browned and cooked through (drain any excess atif necessary).
- Once the beef is browned, add the frozen stir-fry vegetables, cook for 5 minutes, or until the vegetables are heated through and tender.
- Add the soy sauce to the pan and stir everything together until evenly coated. Cook for another 1-2 minutes allowing the flavours to meld.
- Allow the stir fry to cool to room temperature before portioning it into freezer safe containers or bags. Label with the date and freeze for up to 3 months. (Tips: serve with whole grains such as brown rice or quinoa)
