Ingredients:
- 1 cup lentils
- 2 medium sweet potatoes
- 1/2 cup feta cheese (crumbled)
- 2 tablespoons olive oil (plus extra for roasting)

Method:
- Rinse the lentils under cold water. In a pot, bring 2-3 cups of water to a boil. Add the lentils and simmer for 20-25 minutes until tender. Drain any excess water.
- Peel and chop the sweet potatoes into cubes. Toss them with olive oil, salt, and pepper.
- Roast in a preheated oven at 400°F (200°C) for 25-30 minutes, or until golden and tender.
