  1. Rinse the lentils under cold water. In a pot, bring 2-3 cups of water to a boil. Add the lentils and simmer for 20-25 minutes until tender. Drain any excess water.
  2. Peel and chop the sweet potatoes into cubes. Toss them with olive oil, salt, and pepper. 
  3. Roast in a preheated oven at 400°F (200°C) for 25-30 minutes, or until golden and tender.
  4. In a large bowl, combine the cooked lentils, roasted sweet potatoes, and crumbled feta. 
  5. Drizzle with olive oil and toss gently to combine. Season with salt and pepper to taste.
