An easily digestible meal that supports goals for hormonal balance and sustained energy (serves 1-2).
Ingredients:
- 300g carrots, chopped
- 1 onion, chopped
- 1 tbsp olive oil
- 1 tsp ginger, grated
- 1/2 tsp nutmeg
- 500ml vegetable broth
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and grated ginger. Sauté for 3-5 minutes until the onion becomes soft.
- Stir in the chopped carrots and nutmeg, allowing them to coat with the oil and spices. Let the carrots cook for about 2 minutes.
- Pour in the vegetable broth, and bring the mixture to a boil. Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, or until the carrots are tender and easily pierced with a fork.
- Once the carrots are soft, use an immersion blender directly in the pot or transfer the soup to a regular blender. Blend until the soup reaches a smooth, creamy consistency. If the soup is too thick, you can add more broth or water to achieve your desired texture.
- Taste the soup and adjust with salt and pepper as needed. Serve warm and enjoy the comforting flavors.
- For additional protein, serve with a side of grilled chicken, lentils or a boiled egg.
