A freezer friendly meal with lean protein and healthy fibres fuelling your body (serves two).
Ingredients:
- 300g chicken breasts, diced
- 300g sweet potatoes, cubed
- 100g spinach
- 180g cooked quinoa
- 60g shredded cheese
Instructions:
- Preheat your oven to 190°C (375°F).
- Prepare your ingredients by dicing the chicken breast and cubing your sweet potatoes – add any seasonings to your preference.
- Cook the quinoa according to package directions and saute or steam your spinach until wilted (if you prefer).
- In a large baking dish, combine the diced chicken, potatoes, cooked quinoa and spinach before topping with shredded cheese and stir to ensure everything is evenly distributed.
- Place the dish in a preheated oven and cook for 20 minutes, or until the chicken is fully cooked and the sweet potatoes are tender.
- Once the casserole is done, allow it to cool to room temperature before dividing into individual portions for easy reheating.
- This casserole can be stored in the fridge for up to 3 days or frozen for up to 3 months. (Tips: making a double batch can be a lifesaver for easy freezer restocking and ensure you thaw in the fridge overnight when removed from the freezer for easy reheating)
