A freezer friendly meal with lean protein and healthy fibres fuelling your body (serves two).

Ingredients:

Instructions: 

  1. Preheat your oven to 190°C (375°F). 
  2. Prepare your ingredients by dicing the chicken breast and cubing your sweet potatoes – add any seasonings to your preference. 
  3. Cook the quinoa according to package directions and saute or steam your spinach until wilted (if you prefer). 
  4. In a large baking dish, combine the diced chicken, potatoes, cooked quinoa and spinach before topping with shredded cheese and stir to ensure everything is evenly distributed. 
  5. Place the dish in a preheated oven and cook for 20 minutes, or until the chicken is fully cooked and the sweet potatoes are tender. 
  6. Once the casserole is done, allow it to cool to room temperature before dividing into individual portions for easy reheating. 
  7. This casserole can be stored in the fridge for up to 3 days or frozen for up to 3 months. (Tips: making a double batch can be a lifesaver for easy freezer restocking and ensure you thaw in the fridge overnight when removed from the freezer for easy reheating)
