A comforting, nutrient packed meal, perfect to make ahead for busy new mums (serves 3-4).

Ingredients:

Instructions: 

  1. Preheat your oven to 190°C (375°F) and lightly grease a baking dish or casserole dish. 
  2. In a large bowl, mix the cubed chicken breast, cooked rice, broccoli, and cheese. 
  3. Stir everything together until evenly combined. You can use cooked chicken or quickly sauté the chicken in a pan to save time. 
  4. Transfer the mixture into the prepared baking dish and spread it out evenly.
  5. Bake in the preheated oven for 20 minutes, or until the chicken is fully cooked, and the cheese is melted and bubbly. 
  6. Let the bake cool completely before portioning it into freezer-safe containers or bags. 
  7. Label with the date and store in the freezer for up to 3 months. 
  8. To reheat, thaw the bake overnight in the fridge and heat it in the oven at 180°C (350°F) for 15–20 minutes or until heated through. You can also microwave individual portions for 2–3 minutes or until hot.
