A comforting, nutrient packed meal, perfect to make ahead for busy new mums (serves 3-4).
Ingredients:
- 300g chicken breasts, cubed
- 180g cooked rice
- 150g broccoli
- 60g cheese
Instructions:
- Preheat your oven to 190°C (375°F) and lightly grease a baking dish or casserole dish.
- In a large bowl, mix the cubed chicken breast, cooked rice, broccoli, and cheese.
- Stir everything together until evenly combined. You can use cooked chicken or quickly sauté the chicken in a pan to save time.
- Transfer the mixture into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for 20 minutes, or until the chicken is fully cooked, and the cheese is melted and bubbly.
- Let the bake cool completely before portioning it into freezer-safe containers or bags.
- Label with the date and store in the freezer for up to 3 months.
- To reheat, thaw the bake overnight in the fridge and heat it in the oven at 180°C (350°F) for 15–20 minutes or until heated through. You can also microwave individual portions for 2–3 minutes or until hot.
