Ingredients:
- 455g grass-fed beef stew meat
- 1 tbsp ghee or olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 2 medium carrots, sliced
- 1 medium sweet potato, diced
- 5-7 mushrooms, sliced
- 720ml of bone broth or stock
- 240ml coconut milk
- ½ tsp turmeric
- ½ tsp cinnamon
- 1 tsp sea salt
- ½ tsp black pepper
- ½ tsp cumin
- A handful of dark leafy greens (spinach, kale, or chard)
- Juice of ½ lemon
- Fresh parsley for garnish(optional, as needed for garnish)
Instructions:
- Sear the Beef by heating ghee or olive oil in a large pot over medium heat. Add the beef and brown on all sides for about 5 minutes to lock in flavor.
- Add diced onion, minced garlic, and grated ginger to the pot. Cook until fragrant, about 2-3 minutes.
- Add Spices & Veggies: Stir in turmeric, cinnamon, cumin, salt, and pepper as well as the carrots, sweet potatoes, and mushrooms, mixing well to coat with spices.
- Pour in bone broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for 1.5-2 hours, stirring occasionally, until the beef is tender.
- Stir in coconut milk and dark leafy greens, allowing them to wilt. Simmer for another 5 minutes.
- Squeeze in fresh lemon juice for brightness.
- Enjoy on its own or with quinoa, rice, or sourdough bread for extra nourishment.
